PINEAPPLE AND CUCUMBER CHOW

Keep in mind that most people make chow with a sense of eye and taste and personal preference. Some like it really peppery, salty and even tangy. Our suggested measurements are an average guide to making your own chow which you can adjust to your personal taste.

Ingredients

2 large pineapples

2 medium cucumbers, peeled and seeded

5 – 6 large cloves garlic, finely chopped

Juice of 1 – 2 large limes

4 – 6 blades shadon beni

½ tsp brown sugar

1 hot pepper (scotch bonnet), seeded and chopped

¾ tsp salt

½ tsp black pepper

Directions

  1. Peel the pineapples, remove the core and then cut into small chunks.
  2. Cut the cucumbers into small chunks.
  3. Place the pineapple and cucumber in a large bowl.
  4. Add the remaining ingredients and mix well. Taste and adjust seasoning if necessary, Let rest for approximately ½ hour in refrigerator if desired to allow the flavours to blend and the salt to draw liquid from the fruit.
