SPICY BLACKENED PORK CHOPS
Ingredients
4 – 6 pork chops
1 tsp salt
½ tsp – 1 tsp black pepper
1 lime
1tbsp chopped celery
1 tbsp curry powder
1 tbsp paprika
1 tbsp chilli powder
1 tbsp cumin or geera powder
1 tsp turmeric
½ tsp cayenne pepper
Vegetable or olive oil for drizzling and cooking
Chopped chives for garnish
Directions
- Trim chops of fat, wash and place in a dish.
- Sprinkle chops on both sides with salt, pepper and lime juice. Sprinkle chops with chopped celery. Drizzle with a little oil.
- In a small bowl mix all the spices together. Rub the pork chops with the spice mixture ensuring that both sides are well coated. Marinate for at least 2 hours or up to overnight in the refrigerator.
- Preheat oven to 400 degrees F.
- In a large pan, that can be placed an oven, heat oil over high heat.
- Add chops; do not move for approx. 1 – 2 minutes.
- Turn on next side and leave for the same period of time. When the pork is nicely browned, place the pan in the oven for 25 - 30 minutes depending on the thickness of the chops.
- When pork is done, remove from pan, and place in serving dish. Sprinkle with chopped chives for garnish.
