ASIAN FLAVORED BAKED PORK LOIN

Ingredients

1 large pork loin, extra fat trimmed

2 limes

2 tbsp fresh green seasoning

2 large knobs fresh ginger, peeled and finely chopped

3 – 4 cloves garlic, minced

1 tsp salt

1 tsp black pepper

½ cup oyster sauce

¼ cup hoisin sauce

2 tbsp chilli garlic sauce

1 tsp pepper sauce, optional

Few dashes soy sauce

¼ cup ketchup

Cooking spray

 

Directions

  1. Place the pork loin in large bowl. Pierce the pork randomly with a sharp knife to make a few incisions in the loin. Be careful not to let the knife go right through.
  2. Squeeze the juice of the limes over the pork. Mix together the ginger, garlic, green seasoning, salt and black pepper. Rub the mixture all over the pork and insert some into the incisions.
  3. Add the remaining ingredients except the cooking spray, ensuring the pork is covered with the marinade. Cover and let marinate in the refrigerator at least 4 hours or preferably overnight.
  4. Preheat the oven to 375 degrees F.
  5. Lightly spray a baking dish with cooking spray and place the pork in the dish. Cover with foil.
    Bake in the preheated oven 35 – 45 minutes. Keep in mind that based on the size of the loin, the cooking time will vary.
  6. Remove and let rest for a few minutes before slicing and serving.
