BAKED LEMON AND GARLIC FISH

Ingredients

4 kingfish fillets, or any firm fleshed fish (approx. 4 – 6 oz each
Salt and black pepper
¼ tsp cayenne pepper
1/4 cup good olive oil
3 tablespoons minced garlic
1/3 cup dry white wine
1 tablespoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 tbsp chopped parsley
1 tbsp chopped shadon beni
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
Thin slices of lemon

Directions

  1. Preheat the oven to 400 degrees F.
  2. Season the fish fillets with salt, pepper and pinch of cayenne pepper.
  3. Heat the olive oil in a small saucepan over medium heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a large baking dish.
  4. Place the fish fillets in one layer in the sauce. Spoon the fish with the olive oil mixture. Place a few of the lemon slices among the fish.
  5. Bake for 10 - 15 minutes, depending on the thickness of the fish fillets, until the fish is done. Remove from the oven and serve the fish with the sauce over pasta or rice.
