BAKED TOMATO AND BALSAMIC SALMON
Ingredients
4 – 6 salmon fillets, skinless
Salt and black pepper
Juice of 1 lime
2 cans whole tomatoes
3 – 4 cloves garlic, crushed
3 tbsp balsamic vinegar
½ tsp Italian seasoning
3 – 4 blades shadon beni
1 oz butter or margarine
1 tbsp olive oil
Pinch of cayenne or pepper sauce (optional)
Directions
- Season the salmon with salt, pepper and lime juice. Let marinate for half hour.
- Using your hands squeeze the tomatoes, crushing them into smaller chunks.
- Heat the oil and butter in a saucepan over medium high heat.
- Add the garlic and sauté for 1 minute being careful not to let it burn. Add the tomatoes and mix well.
- Add the balsamic vinegar, Italian seasoning, shadon beni, Worcestershire sauce, pepper if using and a little salt and pepper. Mix well and let cook for a few minutes. Taste and adjust seasoning if necessary. Let cool.
- Preheat oven to 375 degrees F. Lightly spray a baking dish with cooking spray.
- Pour enough sauce in the dish to cover the bottom. Place the salmon in one layer in the dish. Cover with the remaining sauce.
- Cover the dish with foil and bake in the preheated oven for 15 – 20 minutes or just until the salmon is cooked. Remove and serve.
