BEER GLAZED PORK CHOPS WITH GET DRUNK MASHED POTATOES
Ingredients
PORK CHOPS & GLAZE
2 cups of beer
2 cups of stock (chicken or vegetable)
4 pork chops (bone in)
½ teaspoon of paprika
½ teaspoon of garlic salt
½ teaspoon cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and black pepper to taste
4 tablespoons of vegetable oil
DRUNKEN MASHED POTATOES
1 pound sweet potatoes
1 pound potatoes
½ cup heavy cream
¼ to ½ cup of scotch whiskey
2 tablespoons of brown sugar
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons of molasses or honey (optional)
Directions
- For the glaze – combine the beer and stock in a heavy pot. Bring to boil over high heat. Reduce the heat and simmer until liquid is reduced to thick syrup, about 1 cup (50 minutes to 1 hour). Remove from heat.
- Season each chop with paprika, garlic salt, cayenne pepper, oregano and thyme; rubbing on both sides of the pork chop. Let marinate at least 1 – 2 hours or even overnight.
- Preheat oven to 400 degrees F.
- Transfer pork chops to greased baking sheet. Drizzle each pork chop on both sides with vegetable oil. Roast in oven until cooked through, 30-40 minutes depending on the thickness of the chops.
- Remove chops from oven, while hot drizzle with beer glaze and allow to rest.
- FOR THE POTATOES ; Preheat the oven 350 degrees. Wash and clean potatoes, then dry. Place potatoes on a foil lined baking sheet. Bake until tender, for about 1 hour depending on size of potatoes. Remove from oven and let sit until cool enough to handle.
- Cut each potato in half and scoop out the flesh into a large bowl. Throw away the skins. Add the cream, scotch, brown sugar, molasses (optional) and salt and black pepper. Mash together until smooth. Cover to keep warm.
Serve with pork chops.
