BLUEBERRY AND APPLE CRUMBLE

Ingredients

For the fruit:

1½ cups blueberries, fresh or frozen

2 – 3 apples, gala or green

Juice of 1 lime

3 tbsp sugar

½ tsp ground cinnamon

Pinch of salt

For the crumble:

8 oz all purpose flour, sifted

6 oz butter or margarine

4 oz sugar

1 tsp ground cinnamon

Pinch of salt

A little extra sugar for sprinkling

Cooking spray or margarine

Directions

  1. Preheat oven to 375 degrees F. Lightly grease a glass pie dish or rectangular baking dish with margarine or lightly coat with cooking spray.
  2. Peel the apples, remove the seeds and cut into chunks. Toss the apples with lime juice in a bowl to prevent browning. Mix in the blueberries.
  3. Add the sugar and cinnamon to the fruit and mix well.
  4. Place flour, sugar, cinnamon and salt in a bowl and mix with a spoon to incorporate all the ingredients.
    Add the butter or margarine. Using fingers or a pastry cutter, mix the butter into the flour mixture until the mixture resembles breadcrumbs. The mixture should hold together when pressed together.
  5. Spoon the fruit mixture in an even layer in the greased dish. Grabbing the dough by handfuls so chunks of dough come together in your hand, sprinkle the crumble in an even layer over the blueberries and apples.
  6. Bake in the preheated oven for 20 – 25 minutes or until the fruit is cooked and bubbling and the crumble is golden brown. Remove from oven and sprinkle with a little extra sugar.
  7. Serve while warm with a scoop of vanilla ice cream.
