BREAKFAST PROVISIONS
Ingredients
4 – 5 cups diced cooked provisions (dasheen, yam, sweet potato)
1 large onion, peeled and chopped
1 sweet pepper, seeded and chopped
2 – 3 cloves garlic, finely chopped
1 tsp green seasoning
1 tbsp chopped shadon beni
½ tsp paprika or smoked paprika
Few dashes pepper sauce (to your liking)
2 tbsp oil
1 oz butter
Salt and black pepper
Chopped parsley or chives
Directions
- Heat 1 tbsp oil and butter in a large sauté pan over medium heat. Add the onions and peppers and cook for 1 – 2 mins. Add the garlic, paprika, green seasoning and pepper sauce along with a little salt and black pepper. Mix well. Cook just a few more minutes for the vegetables to just cook through. Remove from pan and set aside.
- In the same pan add the remaining oil and let heat. Add the cooked provisions. Sprinkle with salt and black pepper. Toss the provisions and let settle in an even layer in the pan. Let cook for a few minutes until one side begins to brown. Mix again and leave to cook, mixing every few minutes. You may need to add a little more oil during cooking.
- When the provisions are beginning to get golden brown on some sides, crisp on outside and tender inside, add back the vegetables along with the shadon beni and mix. Let heat through. Taste and adjust seasoning if necessary. Sprinkle with fresh parsley or chopped chives. Serve.
