BUTTERY GARLIC PROVISIONS

Ingredients

½ lb yam, parboiled and peeled

1 large dasheen, parboiled and peeled

2 sweet potatoes, parboiled and peeled

¾ cup fresh sliced mushrooms

4 – 5 cloves garlic, finely chopped

1 large red or green sweet pepper, seeded and chopped

1 tbsp green seasoning

4 oz butter

1 tsp red pepper flakes or pepper sauce

Salt and black pepper

1 tbsp olive oil

Directions

  1. Cut the provisions into equal sized chunks about 1-inch.
  2. In a large saucepan, melt half the butter with the olive oil over medium high heat.
  3. Add the mushrooms and peppers and cook for a few minutes until tender. Add the red pepper flakes and green seasoning. Season with a little salt and black pepper.
  4. Add the remaining butter and a touch more oil if necessary. When the butter has melted, add the garlic and mix into the vegetables, being careful not to let the garlic burn.
  5. Add the provisions in parts, mixing well after each addition. Season with another pinch of salt and black pepper. Add a little water and cover, allowing the provisions to heat through. Taste and adjust seasoning if necessary. Serve.
