CHEESY GARLIC INFUSED SCALLOPED POTATOES

Ingredients

8 – 10 medium/large potatoes

2 ½ cups heavy cream

5 – 6 cloves garlic, minced

1½ tbsp. green seasoning

Salt and black pepper

1½ cups grated sharp cheddar cheese

Extra grated cheese for the top

Directions

  1. Peel and slice the potatoes into even rounds, approx. 1/8 inch thick. You can place them in a bowl of water to prevent coloring.
  2. Preheat oven to 350 degrees F. In a large saucepan, mix together the cream, garlic, green seasoning and a little salt and pepper to season. Place over medium heat and bring to a gentle boil. Add in the grated cheese and stir until the cheese is blended into the sauce.
  3. Add in the potatoes, making sure they are just covered by the cream mixture. Let cook for 5 – 10 minutes just until the cream begins to thicken.
  4. Spoon the mixture into the prepared dish and sprinkle evenly with the grated cheese.
  5. Bake in the preheated oven for 45 – 50 minutes. The potatoes should be cooked through and the top golden brown. Remove and let sit for about 10 – 15 minutes before serving.
