CHEESY PROVISION PIE

Ingredients

1 medium dasheen

1 – 2 pieces yam

3 – 4 sweet potatoes

1 large sweet pepper, seeded and diced

1 medium onion, peeled and diced

1 tsp all purpose seasoning

3 cloves garlic, minced

1 tbsp fresh green seasoning

4 oz butter

2 tbsp flour

2 ½ cups milk

2½ cups grated cheddar cheese

½ cup grated parmesan cheese

1 tbsp mustard

Salt and black pepper

1 tsp pepper sauce

Cooking spray

Extra grated cheddar cheese for top

Directions

  1. Cook the provisions just until tender. Peel and cut into chunks. Place in a large bowl and set aside.
  2. Preheat oven to 375 degrees F. Lightly spray a baking dish with cooking spray.
  3. In a pot, melt the butter over low heat. Add the onions and sweet pepper. Cook for 1 – 2 minutes. Add the garlic, all-purpose seasoning and green seasoning: cook for 1 minute being careful not to burn. Season with a little salt and black pepper.
  4. Add the flour and stir well. Cook for a minute or two. Add the milk and continue to stir continuously until the mixture thickens and coats the back of a spoon.
  5. Add the grated cheeses. Mix well until the cheese has melted and the sauce is smooth. Stir in the mustard, pepper sauce and a touch more salt and black pepper. Taste and adjust seasoning.
  6. Add the cheese sauce to the cooked provisions. Mix well. Pour into the prepared baking dish. Top with extra grated cheese.
  7. Bake in the preheated oven for 20 – 25minutes or until the top is golden brown. Remove and let rest for 10 minutes before serving.
