CHOCOLATE CHILI COCONUT TRUFFLES

Recipe by Chef Cheryl Ann Shortt – Charles on Cup of Joe Caribbean

Ingredients

5 ounces coconut flakes

1/3 cup chili coconut oil

1/4 cup cream cheese, softened

1 teaspoon vanilla essence

1 cup dark chocolate chips, melted

Directions

  1. Combine all ingredients into a bowl.
  2. Using a tablespoon, scoop the mixture and roll into balls.
  3. Place on a tray and place in the refrigerator until they have all set.
  4. Place the melted chocolate in a bowl, making sure that it's cool to the touch.
    Using a fork place the truffles into the chocolate one at a time and roll until completely coated, use the fork to remove from the chocolate tap the fork to the end of the bowl for any excess chocolate left on your truffles.
  5. Set on a tray lined with grease proof paper and place in the refrigerator for chocolate to set.
  6. Once the chocolate has set, serve and enjoy.
