CHRISTMAS GRAPE CHOW

This can be made anytime of year, but it just so happened that the first time we made it was at Christmas because there were so many grapes in the house. The result of wondering what to do with all these grapes........make chow!!

Ingredients

1 large bunch red seedless grapes, halved

1 large bunch, green seedless grapes, halved

3 – 4 large cloves garlic, finely chopped

Juice of 1 large lime

3 – 4 blades shadon beni, minced

½ tsp sugar

1 hot pepper (scotch bonnet), seeded and chopped

 ½ tsp salt

 ½ tsp black pepper

¼ cup vodka, optional

Directions

  1. Place the grapes in a large bowl.
  2. Add the remaining ingredients and mix well. Let rest for approximately ½ hour in refrigerator if desired to allow the flavours to blend and the salt to draw liquid from the fruit.
  3. Taste and adjust seasoning if necessary.

Trinicooks Tips

You can use any mix of grapes you like. Seedless is just much easier and convenient to use.
