CLAIRE’S FRESH GUAVA DRINK

Ingredients

20 – 25 fresh small guavas

1 stick of cinnamon

Juice of 1 lime

2 tbsp honey (we used Herbwai Honey)

Few dashes Angostura bitters

Water

Directions

  1. Cut the guavas in half and place in a large pot.
  2. Add the cinnamon stick.
  3. Add enough water to cover the guavas. Bring to a boil and let cook on high heat for 5 minutes. Reduce the heat and let simmer for 15 – 20 minutes or until the guavas are tender. Remove from heat, cover and leave to steep overnight.
  4. Stir the mixture and remove the cinnamon stick. In batches strain the mixture, pressing the mixture to ensure all the flavour of the guavas are extracted.
  5. Add the juice to a pitcher. Mix in the lime juice, honey and bitters. Taste and adjust sweetness if necessary. Add a little more water if necessary. Serve over ice. Refrigerate the remaining juice.
