CREAMY TOMATO PASTA WITH SHRIMP
Ingredients
1 pack penne pasta, cooked and ½ cup pasta water reserved
1 lb med/large shrimp, peeled and deveined
Salt and black pepper
1 tsp paprika
1 tbsp green seasoning
Few dashes pepper sauce
5 – 6 medium tomatoes, cut in chunks
3 – 4 cloves garlic, finely chopped
2 tbsp tomato paste
2 – 3 blades shadon beni, chopped
1 cup heavy cream
¾ cup grated Parmesan cheese
2 – 3 tbsp vegetable oil
Extra grated Parmesan cheese, optional
Directions
- Season the shrimp with salt, black pepper, paprika, green seasoning and pepper sauce. Let marinate for ½ hour.
- Heat 2 tbsp oil in a large saucepan over medium high heat. Add the shrimp and cook for 2 – 3 minutes, just until the shrimp are cooked and turning opaque. Remove and set aside.
- In the same pan, add the remaining oil. Add the garlic and cook just for a few seconds, being careful not to burn. Add the chopped tomatoes, stirring into the garlic. Cook until the tomatoes are softened and begin to break down. Season with a little salt and black pepper.
- Add the tomato paste and shadon beni and mix well. Add the cream and stir into the tomatoes. Let cook for 1 – 2 minutes. The mixture will begin to bubble and thicken.
- Add back the shrimp, mix into the tomato cream sauce. Add the cooked pasta along with a little pasta water. Add the grated Parmesan cheese. Mix well. If mixture is too thick, add a little more pasta water and/or cream. Let heat through. Taste and adjust seasoning if necessary.
- Serve with a little extra grated Parmesan sprinkled on top if desired.
