FRY DRY

A longtime breakfast or dinner favourite of fresh small herring, seasoned breaded and fried.

Ingredients

1 lb fresh herrings or sardines, washed and cleaned

2 tbsp fresh green minced seasoning

3 – 4 blades shadon beni, chopped

2 – 3 cloves garlic, minced

½ tsp cumin or geera powder

Juice of 1 lime

½ tsp salt

¼ tsp black pepper

½ tsp pepper sauce or ¼ tsp cayenne pepper

½ tsp paprika

½ tsp cumin or curry powder

1½ –  2 cups flour for dredging

Salt and black pepper

Oil for frying

Directions

  1. Place fish in a large bowl. Season with the green seasoning, shadon beni, garlic, cumin, lime juice, salt, black pepper and pepper sauce. Refrigerate and let marinate for at least 1 hour.
  2. Place the flour in a shallow dish and add the paprika, salt, pepper and cumin or curry powder. Mix well.
  3. Add the fish a few at a time and dredge with the flour ensuring the fish is well coated.
  4. Heat the oil over medium high heat.
  5. Add the fish in small batches and cook for 5 – 7 minutes until the fish is cooked and dark golden brown. Remove and drain on paper towels. Serve with a dip or with fried bakes or hops bread.
