GARLICKY FRIED FISH

Garlic slices are fried with the fish infusing the oil and flavor.

Ingredients

4 – 6 fish slices/steaks, eg king fish or carite, washed and cleaned

Juice of 1 lime

2 cloves garlic, minced

2 tsp green seasoning

3 – 4 blades of chadon beni, chopped

Salt

Black Pepper

Few dashes pepper sauce

3 – 4 garlic cloves, cut in slices

1 cup all purpose flour with a pinch of salt and pepper added

Oil for frying

Directions

  1. Season fish with garlic, salt and pepper, green seasoning, pepper sauce, lime juice and chadon beni. Allow to marinate in the refrigerator for at least half hour. (Note: if marinating overnight, leave out lime and add just about half hour before frying as the acid can breakdown the fish)
  2. Heat oil in a large frying pan over medium high heat.
  3. Place the slices in the flour, lightly coating the fish evenly, shaking off any excess.
  4. Add to the hot oil in batches, cooking on one side about 2 – 3 minutes. Flip onto the other side. Add the garlic slices and let cook alongside the fish being careful not to let the garlic burn, Remove when until cooked through (approx. 2 – 3 minutes depending on the thickness of the slices) and fish is golden brown.
  5. Remove from pan and place on a paper towel to drain excess oil. Serve as desired with some of the garlic chips.
