GRILLED JERK BALSAMIC CHICKEN

Ingredients

4 chicken breasts, boneless and skinless

¼ cup olive oil

2 tbsp  jerk seasoning

3 tbsp balsamic vinegar

¼ cup lime juice

1 tbsp soy sauce

Salt and black pepper

Directions

  1. In a bowl mix together the olive oil, jerk seasoning, balsamic vinegar, lime juice, soy sauce and pinch of salt and black pepper.
  2. Add the chicken breasts, turning in the marinade ensuring the chicken is completely covered with the marinade. Let marinate for at least 6 hours or overnight.
  3. Bring chicken to room temperature.
  4. Prepare and heat grill according to directions. If using a grill pan, heat on stove over high heat.
  5. Remove the chicken breasts from the marinade. Place the chicken breasts on the grill, over a medium heat. Let cook on one side for 7 – 9 minutes, covering the grill while cooking the chicken. If using a pan, place the chicken in the pan, let sear for 1 minute then reduce the heat to medium high and continue cooking.
  6. Turn the chicken onto the other side and cover to continue cooking for another 7 – 9 minutes. Remove when done and let rest for 1 – 2 minutes.
  7. Slice the chicken diagonally and serve as desired.
