GUAVA GLAZED ROASTED PORK LOIN
Ingredients
1 large pork loin, extra fat trimmed
2 limes
Marinade
3 tbsp fresh green seasoning
5 – 6 blades shadon beni, chopped
3 – 4 cloves garlic, minced
1 tsp salt
1 tsp black pepper
Few dashes Worcestershire sauce
1 tsp pepper sauce or red pepper flakes
Guava Glaze;
½ – ¾ cup guava jelly (we used Del Mano)
¼ cup honey
1 tsp red pepper flakes
Salt and black pepper

Directions
- Place the pork loin in large bowl. Squeeze the juice of the limes over the pork followed by salt and pepper.
- Mix together the remaining ingredients in a bowl. Use most of the marinade and rub all over the pork. Cover and let marinate in the refrigerator at least 4 hours or preferably overnight.
- Preheat the oven to 375 degrees F.
- Lightly spray a baking dish with cooking spray and place the pork in the dish. Bake in the preheated oven for 45 minutes.
- Make the guava glaze: Place the guava jelly, honey, red pepper flakes, salt and black pepper in a bowl. Microwave for 1 – 2 minutes until the jelly has melted. Mix well. You can also do this on the stove, mixing the ingredients and stirring intermittently until combined.
- Remove the loin after the first 45 minutes and baste with the guava glaze. Return to the oven and continue to cook for the next 30 to 45 minutes, basting with intermittently with the guava glaze. Keep in mind that based on the size of the loin, the cooking time will vary.
- Remove and baste with any remaining guava glaze. Let rest for a few minutes before slicing and serving.
