HOT PEPPERY PORK ROLLS

Ingredients

1 medium sized pork tenderloin

1 small can chipotle chilles in adobo sauce

1 cup chopped bell pepper

½ cup pimento peppers

2 tablespoons fresh Parmesan cheese

1 tablespoon brown sugar

4-6 garlic cloves, minced

Directions

  1. Preheat oven to 375°.
  2. Slice pork lengthwise, down the middle, cutting to, but not through the other side. Open halves, laying pork flat open. Place plastic wrap over pork; pound flat using a meat mallet or rolling pin.
  3. Remove 1 chile and for added heat use 1 teaspoon sauce from can; reserve remaining chiles for another use. Finely chop chile.
  4. Combine chopped chile, 1 teaspoon sauce, and remaining ingredients in a small mixing bowl. Spread chile mixture over pork. Roll up pork, like a jelly roll. Secure at 2-inch intervals with twine. Place pork on a baking sheet and bake at 375° for 30 -35 minutes.
  5. Cover lightly with foil; let stand 5 minutes. Remove twine, and cut into 1/2-inch-thick slices and serve.
