RELLA’S FRIED CHICKEN

Ingredients

8 pieces of chicken (breast and thigh) or 1 chicken cut into parts, washed and cleaned, skin removed

Salt and black pepper

Juice of 2 limes

2 – 3 tbsp green seasoning

1 1/2 tbsp soy sauce

1 tbsp smoked paprika

1 tsp all purpose seasoning

Few dashes Worcestershire sauce

Few dashes pepper sauce

2 eggs, lightly beaten

¼ cup milk

2 cups flour

½ tsp cayenne pepper

Oil for frying

Directions

  1. Place the cleaned chicken in a bowl. Season with lime juice, smoked paprika, soy sauce, all purpose,seasoning, green seasoning, Worcestershire sauce and pepper sauce. Let marinate for at least 2 hours and up to overnight. Let chicken come to room temperature before frying.
  2. Place the eggs in a shallow bowl, add the milk and beat together. Place the flour in another shallow bowl and season the flour with salt, black pepper, cayenne pepper
  3. Add enough oil in a large frying pan to come about halfway up in the pan. Heat over medium high heat.
  4. As the oil is heating, bread the chicken pieces. Dredge the chicken first in the flour ensuring the chicken is evenly covered with the flour. Then place in the egg mixture, coating well and then return to the flour for a second coating. Repeat with all the pieces.
  5. When the oil is hot, fry the chicken a few pieces at a time. Place in the oil and fry for 5 – 6 minutes on one side. Turn the chicken onto the other side and continue frying approximately the same amount of time. Cooking time will also be determined by the size of the pieces.
  6. When cooked through place the chicken on a wire rack. You can also place the finished pieces in a preheated oven (300 degrees F) to keep warm until all the chicken is fried and ready to serve.
