RELLA’S MEATBALLS
We soak the breadcrumbs in milk for extra moistness.
Ingredients
1 ½ lbs minced meat
3 tbsp green seasonings
4 – 5 cloves garlic, minced
3 tbsp soy sauce
2 – 3 generous pinches of salt and black pepper
1 tbsp pepper sauce
½ cup breadcrumbs
¾ cup milk
½ cup parmesan cheese
1 egg
Oil for shallow frying
Cooking spray
Directions
- Place minced meat in a large bowl. Add the green seasoning, garlic, soy sauce, pepper sauce, salt and black pepper and mix well. Let marinate for ½ hour – 1 hour.
- Place the breadcrumbs in a small bowl and add the milk. Let mixture soak for approximately 15 minutes or until the crumbs have absorbed the milk.
- When ready to make the meatballs, add the egg, cheese and bread/milk mixture to the seasoned meat. Mix just until everything is incorporated. Shape into even sized balls, smaller size if using for appetizers.
- Preheat oven to 350 degrees F.
- Heat oil in a large saucepan over medium high heat. Sauté the meatballs in batches just until browned on both sides. You are not cooking the meatballs at this point, just browning. Remove and place in a single layer on a baking sheet lightly sprayed with cooking spray.
- Place the seared meatballs in the preheated oven to finish cooking, approximately 10 – 15 minutes depending on the size. Remove and use as desired.
