ROASTED CHIMICHURRI PROVISIONS with SALMON

Ingredients

1 large dasheen, parboiled and peeled

2 sweet potatoes, parboiled and peeled

4 green figs, parboiled and peeled

1 large onion, peeled and chopped

2 cloves garlic, thinly sliced

3 heaping tbsp chimichurri (we used Chef’s Palate by Jason Huggins)

1 tsp red pepper flakes or pepper sauce

1 tbsp Italian seasoning

Salt and black pepper

1 tbsp olive oil

2 (4 oz) skinless salmon fillets, cut into chunks

Directions

  1. Preheat oven to 400 degrees F. Grease a large baking dish.
  2. Cut the provisions into chunks and place in a large bowl.
  3. Add the onion and garlic.
    Season with a little salt and black pepper. Mix in the red pepper flakes or pepper sauce and Italian seasoning.
    Add the chimichurri and olive oil and mix well.
  4. Place the provisions in one even layer in the prepared dish. Roast in the preheated oven for 25 – 30 minutes or until tender. Remove from the oven.
  5. Add the salmon chunks among the provisions. Sprinkle with the grated cheddar cheese.
  6. Place back in the oven for 10 minutes or until the cheese is melted. Remove and serve.
