SALTED CARAMEL APPLE TART

Ingredients
Sweet Pastry Dough
200 grams butter, cubed
100 grams icing sugar
1/4 tsp vanilla essence
1 egg
420 grams flour
2 tbsp full cream milk powder
Filling:
250 grams cream cheese
50 grams sugar
25 grams butter
1 egg
25 grams skim milk powder (diluted in 1/4 cup water)
20 grams flour
Salted Caramel apples:
3 apples, diced and placed in lemon juice and water mix
1/2 cup icing sugar
3 tbsp brown or white sugar
1 tsp cinnamon
4 tbsp butter
1/4 cup full cream milk powder ( diluted in 1/4 cup water )
1/4 tsp flaky sea salt
1/8 tsp vanilla essence
Directions
- Dough: Cream butter, icing sugar and vanilla essence until combined: add in egg and cream until smooth. Add in flour and milk powder and mix until completely combined.
- Divide pastry dough into balls according to the size of tartlet shells being used. Press the sweet pastry dough into the tartlet shell, removing excess from the top. Using a fork prick holes in the bottom of the shells and bake in a preheated oven at 350 degrees F for 10 minutes or until golden brown. Set aside
- Filling: Cream sugar, butter and cream cheese until light and creamy. Add egg and continue
creaming. Add diluted skim milk powder and mix until fully incorporated. Finally add flour and mix until combined into a smooth mix.
- Fill the shells and bake for approximately 10 minutes or until the filling is set.
- Salted Caramel apples:
Melt butter in a sauté pan add sugar and cinnamon stir until sugar is melted add in diced apples stir until apples is coated with the mixture and cook for about 4 minutes remove from heat.
- Place icing sugar in a sauté pan over medium heat, stir until sugar starts to melt. Once melted, add in butter: the mixture would bubble up. Allow to settle and allow it to come to an amber color. Once this is achieved, add in diluted milk powder and sea salt stir and remove from heat.
- Add apples to caramel sauce finish tarts by putting caramel apples on top and enjoy.
