SALTFISH CHEESECAKE

Ingredients

2 pounds cream cheese

8 ounces grated cheddar cheese

1 cup sour cream

1/3 cup Parmesan cheese

3 large eggs

1/4 cup oil-packed sun dried tomatoes, chopped

1 1/2 tbsp chopped chive

2 tsp minced garlic

1 cup shredded salt fish

Crust

3/4 cup pecans and dry seasoned bread crumbs

3 tablespoon melted butter.

Directions

  1. Preheat oven to 350 degrees F.
  2. Boil salt fish, shred and set aside.
  3. For the crust, pulse the pecans and bread crumbs in the food processor until they are finely grounded, add butter and mix until the mixture is moist press in the bottom of a 8” spring foam pan. Bake for 10 minutes until the crust is set it should have a pale golden color.
  4. In a mixing bowl place all the cheeses and mix on medium speed until creamy. Add eggs, one at a time and continue mixing until smooth. Combine into the mixture the salt fish, garlic, chives and sun dried tomatoes. Pour into the prepared crust.

  5. Place in preheated oven and bake for 45 minutes until it's golden brown on top and set in the middle. Allow to cool in the pan, once cool cover and refrigerate until completely firm.
  6. Once ready to serve remove from the pan, garnish and serve with your favorite crackers or even some mini fried bakes.
