SALTFISH MACARONI PIE

Ingredients

1 large pack small pasta shells

4 – 5 saltfish fillets, soaked overnight

1 green sweet pepper, seeded and diced

1 red sweet pepper, seeded and diced

2 onions, peeled and diced

3 cloves garlic, minced

3 blades shadon beni, minced

2 tbsp chopped chives

2 tbsp oil

Pinch cayenne pepper

2 oz butter or margarine

2 heaping tbsp flour

3 cups milk

3 cups grated cheddar cheese

1 tbsp mustard

Pinch black pepper

Extra grated cheese for top

 

Directions

  1. Boil the pasta just until tender. Drain and set aside.
  2. Using hands pull the saltfish fillets apart into large chunks.
  3. Heat the oil in a large saucepan over medium heat. Add the onions and sweet peppers and cook just until tender. Add the garlic and green seasoning. Mix well. Add the fire salt or cayenne pepper. Add the saltfish and stir into the vegetable mixture, flaking the fish more. Remove from heat and let cool a little.
  4. Make the cheese sauce. Melt the butter or margarine over medium heat. Add the flour and mix into the butter. It will form a paste. Add the milk and stir continuously until it starts to thicken. Add the grated cheese, mustard and black pepper. Mix until smooth.
  5. Add the saltfish mixture to the cheese sauce and mix well. Place the cooked pasta in a large bowl and add most of the saltfish cheese sauce. Stir until well incorporated into the pasta. Add the remaining sauce and mix. Pour the pasta into a greased baking dish, spreading evenly in the dish. Top with the extra grated cheese.
  6. Bake in a preheated 400-degree F oven for approximately 30 – 40 minutes or until golden brown. Remove and let rest for 5 – 10 minutes before serving.

For an easy shortcut, readymade saltfish buljol can be used to fold into the cheese sauce.
