Sauteed Greenfigs and Mushrooms

Ingredients

10 – 12 green figs, boiled and peeled

3 cups fresh white or cremini button mushrooms, cut in quarters

1 green or red sweet pepper, seeded and chopped

1 small onion, chopped

2 – 3 cloves garlic, diced

1 tbsp chopped celery leaf

2 – 3 blades chive, cut in 1–inch pieces

Salt and black pepper

1 oz butter

2 tbsp olive oil

Directions

  1. Cut the green figs into 1-inch slices.
  2. Heat the olive oil and the butter in a large saucepan over medium high heat.
  3. Add the onion and cook for 1 minute. Add the mushrooms and sweet pepper and continue to cook until the mushrooms are almost tender. Add the garlic and mix well. Season with a little salt and pepper. You could add a little more butter or oil at this point.
  4. Add the green figs, chive and celery. Gently mix into the mushroom mixture.
  5. Reduce the heat to low. If the green figs start to stick to the pan you can add a little water or chicken stock. Let the mixture heat through. Taste and adjust seasoning if necessary. Serve.
