SAUTEED TILAPIA IN SIMPLE TOMATO SAUCE

Ingredients

4 – 6 tilapia fillets

Salt and black pepper

2 tsp fresh green seasoning

Few dashes Worcestershire sauce

Juice of ½ lime

4 medium tomatoes, diced

½ onion, peeled and diced

2 tbsp red wine vinegar

2 cloves garlic minced

½ tsp pepper sauce or cayenne pepper

½ cup vegetable stock or water

Oil for frying

Directions

  1. Season the fish with salt, black pepper, green seasoning and Worcestershire sauce. Let marinate for at least half hour. Just before cooking drizzle with a little lime juice.
  2. Heat approximately 2 – 3 tbsp oil in a large saute pan over high heat. Sear the fish fillets 2 – 3 at a time searing on both sides until cooked, approximately 3 minutes on each side. Remove and set aside.
  3. Add the onions, tomatoes and garlic to the same pan, mixing well to incorporate any stuck on bits.
  4. Add the red wine vinegar, pepper sauce or cayenne, stock and a little salt and pepper. Let cook for a few minutes until some of the liquid has reduced. Taste and adjust seasoning if necessary.
  5. Add the fish to the sauce and let simmer just until reheated. Serve.
