SPICED PLANTAINS WITH TOMATOES

Ingredients

2 ripe plantains

1 small onion, peeled and sliced

10 – 12 cherry tomatoes, halved

½ tsp smoked paprika (regular paprika can be used)

Pinch of cayenne pepper or pepper sauce

Salt and black pepper

2 – 3 blades shadon beni, chopped

Oil for frying

Directions

  1. Peel the plantains and cut in half. Cut the halves into 3 – 4 vertical slices.
  2. Heat approximately 2 tbsp oil in a large frying pan over medium high heat. Add the plantains in one even layer in the pan. Saute for 2 – 3 minutes on one side. While the plantains are frying, season with the smoked paprika, cayenne pepper, salt and black pepper.
  3. Flip the plantains on the other side and continue cooking. Add the onions and tomatoes and let cook alongside the plantains. When almost cooked through, sprinkle with the chopped shadon beni.
  4. Toss the pan so the vegetables and plantains mix together. Place on a platter and serve.
