SPICY STEAK STRIPS WITH WARM CORN SALSA

Ingredients
2 – 3 rib eye or sirloin steaks
Salt and black pepper
1 tbsp green seasoning
1 tbsp paprika or smoked paprika
1 tsp cumin
½ tsp cayenne pepper
2 tbsp olive oil
SALSA
1 tin whole kernel corn drained
1 sweet pepper, seeded and diced
1 small onion, diced
2 clove garlic, chopped
2 tomatoes, diced
1 tbsp green seasoning
½ cup cooking cream
Salt and black pepper
1 tsp cumin
½ tsp chilli powder or 1 tsp taco seasoning
Pinch of red pepper flakes
2 tsp olive oil or butter
Directions
- Cut the steaks into 1-inch strips. Season with salt and black pepper. Mix together the spices in a small bowl. Sprinkle over the steak strips and drizzle with a little olive oil. and allow to marinate 10 – 15 minutes.
- While the steak is marinating, make the salsa. In a sauté pan heat the oil or butter.
Add the onions and peppers and cook for a few minutes. Add the garlic and stir in to the onions. Add the tomatoes and corn. Season with a little salt and black pepper. Add the spices and green seasoning. - Add the cream and mix well. Cover a let simmer for a few minutes. Taste and adjust seasoning if necessary. Keep warm.
- Heat the oil in a large sauté pan until smoking hot.
- Add the steak strips in batches if necessary and sear for 1 minute on one side. Quickly turn onto the other side and cook quickly, to desired doneness. This should not take more than 1 – 3 minutes depending on the thickness of the steak.
- To serve, place steak strips on a plate and spoon some of the warm corn salsa over the top. Serve with roasted potatoes or toasted bread if desired.
