SPINACH & MUSHROOM MEATBALLS

We added spinach, mushrooms and oats instead of breadcrumbs in this hearty meatball recipe.

Ingredients

1 lb ground beef

2 tbsp green seasoning

1 tsp oregano

1 tsp basil

Few dashes Worcestershire sauce

4 cloves garlic, minced

Salt and black pepper

3 – 4 cups fresh spinach leaves, chopped

2 cups sliced fresh white or cremini button mushrooms

1 large egg

½ cup oats

½ cup evaporated milk

½ cup grated Parmesan cheese

Directions

  1. In a large bowl, place ground beef, green seasoning, basil, oregano, Worcestershire sauce and garlic. Mix well to ensure everything is evenly distributed through the meat. At this point the meat can be placed in refrigerator for at least half hour to marinade.
  2. Place the oats in a bowl and cover the with the milk. Let soak for approximately 15 – 20 minutes or until the oats have absorbed the milk.
  3. Heat a little oil in a frying pan over medium high heat. Add the mushrooms and cook for 1 – 2 minutes. Add the spinach, mix into the mushrooms. Season with a little salt and black pepper. Cook just until wilted. Let cool.
  4. To the seasoned meat, add the cooled spinach and mushrooms. Mix into the meat. Add the soaked oats, egg and Parmesan cheese. Mix together just until combined.
  5. Preheat oven to 375 degrees F. Lightly spray a shallow baking dish with cooking spray.
  6. Form the meat into even meatballs. Place in baking dish.
  7. Bake in oven for 15 – 20 minutes until cooked through.
  8. Add to your favorite spaghetti sauce or salad. Make the meatballs smaller and serve with favorite dipping sauce for a simple appetizer.
