STEAK & PEPPER SANDWICHES

Ingredients

2 rib eye or sirloin steaks

Salt and black pepper

½ tsp cayenne pepper or pepper sauce

½ tsp paprika (smoked paprika can be used)

1 sweet pepper, seeded and cut into slices

1 medium onion, peeled and sliced

2 tbsp oil

Chopped Lettuce

Mayonnaise

Mustard

Cheddar Cheese slices

4 bread rolls cut in half, lightly toasted

Directions

  1. Cut the steaks into (1-inch thick) slices. Season with salt, black pepper, paprika and pepper. Set aside.
  2. Heat 1 tbsp oil in a large saute pan until very hot. Add the steak slices (you may need to do it in batches) and cook quickly to desired doneness. If you have a cast iron pan, that would be perfect. Remove and set aside.
  3. Add a little more oil to the same pan. Add the peppers and onions and cook just until tender.
  4. Preheat oven to 450 degrees F.
  5. Assemble the sandwiches. On the bottom halves of the bread, place some of the steak slices. Top with the peppers and onions. Cover with a few slices of cheese. Place in the preheated oven just for 2 – 3 minutes or until the cheese is melted. Remove.
  6. While the bottom halves are in the oven, spread the top half with mayonnaise and a little mustard. Top with some chopped lettuce. When the other halves are done, place together and enjoy.
