Stewed Pork and Bodi

Ingredients

1 bundle bodi, washed and cut in 1-inch pieces

2 lbs stewing pork, washed in lime water and cut in chunks

Fresh minced green seasoning (chive, thyme, shadon beni)

4 cloves garlic, minced

Juice of 1 lime

6 pimento peppers, seeded and chopped

½ cup brown sugar

1 medium onion, chopped

3 tomatoes, chopped

Few dashes Worcestershire sauce

4 tbsp ketchup

Salt

Black pepper

2 – 3 tbsp oil

Directions

  1. Season pork with salt, pepper, green seasoning, garlic, lime juice and Worcestershire sauce. Marinate for at least 1 hour.
  2. Place sugar in a large pot and heat over high heat until the sugar melts and is golden to dark brown.
  3. Immediately add the pork, stirring well to ensure all the pork is browned with the sugar.
  4. Add the onions and pimento. Cook for a few minutes. Stir to avoid sticking for approximately 3 minutes.
  5. Reduce heat to medium high. Add a little water and stir. Cover and let pork stew for approximately 15 – 20 minutes. You may need to add a little more water during cooking.
  6. Add the bodi, ketchup, tomatoes, salt and pepper. Season with a little salt and black pepper. Cover and continue to cook for another 20 - 25 few more minutes or until the pork is tender. Add a little water if needed. The gravy should not be too thin.
  7. Taste and adjust seasonings if necessary. Serve hot over rice.
