STEWED PORK

Ingredients

2 lbs pork, cut in chunks

(we like a mixture of loin and stew cuts)

Fresh minced green seasoning (chive, thyme, shadon beni)

4 cloves garlic, grated

2 – 3 pimento peppers, seeded and diced

Juice of 1 lime

1 tbsp paprika

1 tsp pepper sauce

1 medium onion, chopped

1 large carrot, cut in large dice

1 cup diced pumpkin

Few dashes Worcestershire sauce

4 tbsp ketchup

1 ½ cups chicken stock or water

Salt

Black pepper

2 – 3 tbsp brown sugar

Directions

  1. Season pork with green seasoning, garlic, lime juice, paprika, pepper sauce, Worcestershire sauce and a little salt and pepper. Marinate for at least 1 – 4 hours.
  2. Heat sugar over medium high heat until liquefied and dark caramel color; Be careful not to let burn. Add the pork and stir into the sugar. Cook for a few minutes.
  3. Add the remaining ingredients and mix well. Reduce heat to medium and let cook until the pork is cooked and tender, approximately 45 mins – 1 hour. You may need to add a little more water during cooking. Taste and adjust seasoning.
  4. Reduce heat to low. Cover and continue to cook for a few more minutes. Serve.
