SWEET POTATO ROTI

Ingredients
2 Cups flour
2 teaspoons sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup mashed orange sweet potatoes
1-1 1/2 cups of water
Quarter of a pack/ 2 oz, melted butter(can be substituted with margarine or ghee)
Oil or butter for cooking
EQUIPMENT:
Cup measure
Tablespoon

2 Spatulas or dablas
A wide flat stove top cooking surface, such as a tawa, skillet or frying pan
Directions
- Mix together flour, salt, sugar and baking powder evenly. Add mashed sweet potatoes and mix until it is well covered in flour.
- Slowly add water, about a tablespoon at a time while kneading the dough. Mix until all the ingredients are well incorporated and you have a soft slightly sticky dough ( like play doh), adding water as necessary.
Cover the dough with a damp paper towel or tablecloth. Leave for about 25 minutes - Flour your hands and divide the dough into 3 balls (4 if you are cooking it using a skillet or wok)
Leave for 10 minutes covered. - Flour your counter lightly and flatten the first ball of dough. Roll into a thin round sheet with a rolling pin, about the size of a 25¢ coin. Flip it over as your roll and sprinkle flour to reduce stickiness. Take a knife a cut straight line from the centre to the edge.
- Take your molten butter and rub light layer onto the dough from one side of the cut to the other leaving a few inches dry at the end and sprinkle a little flour on the dry end to make it easy to hold.
- Starting from the buttered end start folding the done into a cone as tightly as possible stopping at the dry end.
Take the end and tuck it into the open end of the cone. Then tuck the rest of the open end inwards to close the layers. Rest it down on the wide end then press it down to a ball. Tuck the point on the cone in to close the ball.
Cover the finished ball and repeat with all the other balls. Leave them covered for 2-5 hours. - Take your flat cooking surface and put it on the fire at medium-high. Lightly coat it with butter or oil.
- While it is getting hot roll out the first ball into a thin sheet like before. Lift and put it onto the cooking surface.
Lightly coat the side facing your with butter to keep it moist and cooking evenly. When it starts to bubble flip it over as you would a pancake. - Monitor the side on the surface until light golden brown spots form. Flip it again and start beat it inwards and on top with two spatulas to release the layers( bussing it up). Do this for about 10 seconds until the flaky layers are visible. Move it to a bowl when it is done. Repeat the process with the other balls of dough.
- Enjoy it with meat and/or vegetables cooked in a light curry sauce or any stew of your preference .
