MEXICAN BEEF BOLOGNESE

Our version of the classic beef bolognese infused with Mexican flavors

Ingredients

1 lb minced meat

2 – 3 cloves garlic, chopped

2 tbsp green seasoning (thyme, chives, shadon beni, celery, finely chopped)

1 tsp salt

1 tsp black pepper

1 tsp red pepper flakes

1 tbsp ground cumin

1 tsp chili powder

2 tbsp oil

2 tbsp taco or fajita seasoning

1 large onion, diced

1 large sweet pepper, diced

10 – 12 white button mushrooms, sliced

1 cup whole kernel corn

1 can black beans, drained and rinsed

2 tbsp tomato paste

1 – 1 ½ cups tomato sauce

Worcestershire Sauce

Directions

  1. Season minced meat with salt, black pepper, pepper flakes, garlic, cumin, chili powder and green seasoning. Refrigerate for at least 1 hour or up to overnight.
  2. In a large deep sauté pan heat oil over medium high heat. Add the onions and sauté until tender. Add the minced meat and cook until the meat is browned.
  3. Add the carrots, sweet peppers, mushrooms and taco seasoning. Continue to cook for another 5 minutes. Add the corn, black beans tomato sauce, a few dashes of Worcestershire sauce, ketchup and the tomato paste. Lower the heat and let simmer for 15-20 minutes.
  4. Taste and adjust seasoning if necessary. Serve over spaghetti or linguine.
