SEARED STEAK & SPICY SHRIMP

Ingredients

2 striploin steaks

Salt and black pepper

1 tsp smoked paprika

2 oz butter

1 – 2 small sprigs fresh rosemary

8 – 10 large shrimp, peeled and deveined

½ tsp chili powder

1 tsp smoked paprika

½ tsp ground chipotle powder

Salt and pepper

2 tsp vegetable oil

Fresh herbs for garnish

Directions

  1. For the steak:
    Heat about 2 tbsp oil in a sauté or cast iron pan over high heat. Add the steak and let sear for 2 – 3 minutes on each side depending on the thickness and the degree of doneness you prefer (3 – 5 minutes for more medium well). After you flip the steak onto the other side add the butter and spoon the melted butter over the steak while searing.
    Place the steak in a preheated 400 degree F oven for 2 – 3 minutes to finish at desired temperature, if the steak is very thick. If not you can complete the cooking in the pan.
    Remove the steak from the pan and let rest about 5 minutes before slicing.
  2. For the shrimp
    Season the shrimp with the spices and a little salt and pepper. Let marinate for approx. 10 – 15 minutes.
    Heat the oil in a medium sauté pan over high heat. Add the seasoned shrimp and cook on one side for 1 – 2 minutes, then turn the shrimp onto the other side to finish cooking, about 1 – 2 minutes depending on the size of the shrimp. Remove from hot pan.
  3. To serve, slice the steak diagonally against the grain and place on serving plate. Top with some of the shrimp. Garnish with some fresh herbs and serve with preferred sauce. For some added decadence, add a fried egg to the plate.
